A layered cocktail combining, whisky-infused Mānuka Honey, cold-distilled wild celery and preserved apple to evoke the depth and wildness of the Blue Gum swimming hole that the drink is named after. Pour it over large-format ice in a frozen rocks glass and garnish with a slice of honey-preserved apple.
