An elevated dessert that blends fresh fruits with refreshing layers of texture and contrast, not least the whisky-infused Mānuka Honey which turns a sensational sweet into an unforgettable delight.

Posset is made using freshly squeezed citrus from our orchard, then mixed with cream, gelatine and whisky-infused Mānuka Honey. It’s then placed into a siphon gun then allowed to sit overnight. The granola is made by baking cereals & nuts tossed through the honey and baked.The citrus tuille are made by boiling freshly squeezed citrus with honey and gellan gum, then dehydrated, chilled and dusted with freeze dried fruit powders.
