The eel is gently smoked over Mānuka wood to achieve a clean, elegant aroma, not too strong, just enough to perfume the flesh. Once portioned, it’s lightly warmed and brushed with the whisky-infused Mānuka Honey glaze, which creates a fine lacquer that enhances the natural sweetness of the eel. The cauliflower and horopito cream is aerated for lightness, offering gentle spice and balance, while the black garlic purée brings umami depth. The samphire is blanched quickly and dressed with sesame and chilli to add vibrancy and freshness.
