A fresh and unique main that delicately pairs line-caught Cod from the pure, ice-cold Chatham seas with the combination of sweet, umami and fragrant five spice and luxurious, whisky-infused Mānuka Honey.
The freshly filleted fish was glazed and let to sit to marinade for 5 minutes. It’s then cooked at 350 degrees to promote the crispy skin but also to slightly charr the glaze to give it another element of flavour. Finished with a creamy and rich celeriac and apple puree which provides a tartness and an earthy garlic chive mayo.
